Tsuyama, the city of beef offal
Tsuyama City, Okayama Prefecture, is home to the meat processing center. A regular at the B1 Grand Prix, there are many restaurants serving "Hormone Udon" noodles made with beef innards all over the city. With beef innards being eaten all over the city, I wondered what kind of "stew" they had! I headed to Tsuyama with this in mind!

Hashino Shokudo, founded 130 years ago
First, we went to Hashino Shokudo, a long-established restaurant that has been in business for 130 years and where you can drink from lunchtime, to fill our stomachs.

Apparently, the restaurant used to be called "Hirataya," and the original wooden sign is still hanging inside the restaurant. Currently, the restaurant is run by the fourth and fifth generations, and the family continues to use the "Hashino Shokudo" sign. Amazing!

Super Dry large bottle
Actually, I came here about three years ago, but I was driving at the time, so I just went to eat some horumon udon and then head home. This time, I started off with a bottle of beer, which I'd been longing for!

I had assumed there would be a lot of Kirin because Tsuyama is the hometown of Isono Kei, who brought Kirin Beer to the world, but it turns out this is Asahi Super Dry.
Specialty Hormone Udon
You can choose from normal, mild, or very spicy. This time I chose mild (probably the last time too). The chef skillfully grilled the scallions, bean sprouts, and offal on the hot plate.

The special miso, made by blending soy sauce, garlic, apples, and yuzu, is perfectly combined with the sweetness of the small intestine to create a delicious dish. The omasum and heart also have a nice texture to them.

Grilled chicken
I got carried away and ordered the grilled chicken with "super spicy" sauce. The crispness of the bean sprouts and the umami of the chicken mixed with the super spicy sauce to finish off the bottled beer! For someone likes spicy food, the spiciness was just right.

It's still daytime, so I'll stop drinking here. I asked the chef and he said that there aren't many stews in Tsuyama. He doesn't stew the meat because it's so fresh. Thank you for the delicious food, drinks, and valuable stories! I hope you'll keep on preserving this flavor for 150, 200 years to come!
