Borrowing whiskey barrels aged in Chichibu from Chichibu Distillery, with whom we have had a long-standing friendship, we began barrel aging of Hyakunen Umeshu, Japan's best. The Hyakunen Umeshu malt spirit was aged for 12 months. Finally, carefully selected malt whiskey was added to create a vanilla aroma derived from the whiskey barrels and a complex, rich sweetness. This is the first in our quest to explore the possibilities of umeshu and whiskey barrels.
