Akita "Ajimi"

Located in Kawabata, Akita, this quietly operating restaurant in a back alley has a name that means "beautiful taste"...or rather, it's "delicious" read backwards, so it's called "Miyoshi." Its appearance is irresistible for any drinker, and once you step through the noren curtain, an even more spectacular view unfolds before your eyes.

Let's head to the spectacular view

Founded in 1970, this highly skilled bar has been operating in Kawabata for over half a century, run by a father-son couple, the first and second generations. They are so confident in their sashimi that even local sushi chefs come to try it. The showcases and counters are lined with seasonal fish! Come taste the flavors of the Sea of Japan!

appetizer

The appetizer grabbed my heart right from the start. It was a salad of "Hirokko" and cod roe, which is only available in Akita for a short time (around February). The Hirokko was such a hit that I bought a ton at the market the next morning!

hot sake

A hot sake of "Takashimizu", a representative sake of Akita! Hot sake gets the engine going quickly!

Sashimi platter

The sashimi platter includes five types of tuna, scallops, marinated mackerel, octopus, and rockfish! It's packed with the flavors of the Sea of Japan!

The slightly marinated mackerel and the way it is cut into thin or thick slices to suit the fish make it exquisitely delicious.

Stewed offal

This light miso stew features 80% pork intestine, sometimes with white konjac and burdock root, and a hint of ginger. Most restaurants in Akita call their stew "Hormone Niku" (Hormone Stew), and most of these are made with pork intestine as the base. If you go to Noshiro, you'll find restaurants that use horse intestine.

Final drink

Finally, slow down with some cold sake at Fukukomachi in Yuzawa City, Akita Prefecture.

Just then, I ended up getting a drink recommended by a regular customer sitting next to me at the counter!

Ajimi is bustling with energy in the Kawabata area, where over 150 establishments have closed due to the COVID-19 pandemic, and is packed with the charm of Akita, the city of sake. I'll definitely visit again if I come to Akita!
