The last time I came here, it was in the middle of the COVID-19 pandemic. At the time, there was a state of emergency declaration, so izakayas were sometimes open and sometimes closed. Meanwhile, while I was aimlessly strolling around the city of Gifu, I was drawn in by the exterior of this restaurant, which I liked, and was drawn in as if drawn inside.
I only have fond memories of Kushibiki, where the older staff and regular customers were kind to me.

It's been five years since then! I'm back after a long time.
When we arrived, the exterior had been given a much nicer makeover, and the interior had been completely renovated with new wallpaper and paint, while the layout remained the same.

Gifu "Kushibiki"
It started as a food stall, and was passed down through the first and second generations, and then a regular customer from that time took over management from the second generation, and now the third generation is running the restaurant. It has a new business style, with several housewives working together to run the restaurant, including in charge of lunch preparations, the head chef during business hours, and the floor manager.
Inside the store, an A4 pouch detailing the history of the restaurant was placed alongside the menu.

It has been two years since the current system was introduced in June 2023. As it was a weekend, both the tatami room and the counter were almost full, creating a lively atmosphere. I feel that the business succession of this long-established Gifu bar has been a great success.
Highball
We start with a Kaku Highball and open with an elaborate platter of three appetizers.

I don't remember what the menu was like back then, but there was a wide selection, from sour drinks to Midori Gin, plum wine, and non-alcoholic drinks. It was a popular izakaya that was frequented by young local customers.

It has a crisp, dry taste that will wake you up and leave you feeling refreshed and refreshed.
Octopus sashimi
I had raw octopus sashimi. The random texture of the legs and suckers was fun and made for a great value dish.

I enjoyed the drink little by little, listening to the conversation between the rather drunk regulars and the staff.
