Kagoshima's local stew "nankotsu"
In Kagoshima, there is a local stew called "nankotsu," which is made by simmering pork belly cartilage until it becomes soft and tender. This prefectural dish is made at home by simmering pork belly cartilage and adding granulated sugar, brown sugar, miso, and shochu.

Tonight, I went out drinking hoping to find some "nankotsu" (fish innards), but I couldn't find any. So I went to "Futoshi" in Meyamabori, a place I've been wanting to go to for a while, and had a strategy meeting by myself.

This shop, "Futoshi," has a great impact. It looks like a local convenience store, but it's actually a liquor store that mainly serves corner drinks.

The owner, originally from Tokunoshima, Kagoshima Prefecture, worked in Tokyo before returning to Kagoshima about 30 years ago and buying the liquor store with his relatives. He decided that it would be difficult to run a liquor store alone, so he decided to set up a corner drinking area.

What's more, it has a sanitation license and serves cooked food, making it a top-notch corner bar where you can both drink and eat. You'll be greeted by a shop curtain that reads "Ichimore," a greeting in Tokunoshima dialect.
Hot water
The local limited edition sake produced by Kagoshima Brewery is called "Meizanbori." It is served in a clear sake bottle with hot water.

This style is great♪ I hope it will be adopted in bars in Tokyo too!

This simple miso stew is made only with pork small intestines, a common dish in the Kanto region, and contains nothing else, with a purity of 100%.
While drinking sweet potato shochu at a corner bar, I nibble on the familiar stewed offal. If I let my guard down, I'll lose track of where I am for a moment.

We went to this corner bar to discuss our strategy. We were tempted by the menu, which seemed to be Tokunoshima specialties, such as the famous egg rice balls and the sardine dish "Garants", but we decided to go with the safe option of satsumaage.
