Machiya, a town for workers, has long been home to restaurants that are open from the morning for workers returning from the night shift, and is dotted with sophisticated, independent establishments that grab the hearts of bar lovers like a changeup.

Machiya "Masuda"

It's a 10-minute walk north from Machiya Station. Its exterior, blending seamlessly into the residential area, is a perfect example of its beauty.Masuda" was truly a "late-night diner for serious working people."

Reservations are required and are usually booked up for months, but I decided to drop in early and they said they would be happy to accommodate me for a short time, so I was able to slip in! I'm so lucky today!

Pig innards are slaughtered that day. They deliver the entire innards, from tongue to cartilage, heart, skirt steak, and liver. They have been operating in this area for over 65 years, providing the freshest innards as a nutritious tonic for working people.

Kobukuro sashimi

I was lucky enough to get some Kobukuro sashimi, a popular menu item with limited quantities.

The gizzard shad is only lightly boiled and is almost raw. This is proof of its freshness. The freshly crushed raw gizzard shad, which was alive until the morning, has a nice crunchy texture and, because it has not been cooked, has no peculiar taste or odor. It's a rare find!

I ordered the liver with sauce and the hearts and skirt steak with salt.

The extra-large liver is cooked just a little rare, which is exquisite. The light sauce does not overpower the flavor of the ingredients, but rather enhances their umami.

These are also large and chewy, and adding sesame oil from the table makes them even more delicious.

Skirt steak (salt)

The quality of the meat is so good you'd think it was made from high-quality beef. The seasoning is light, so you can enjoy the flavor of the meat, but it's also nice that you can adjust it to your liking with the salt and soy sauce on the table.

Finish off with a chuhai.

I only stayed for about 40 minutes, but it was a rich and satisfying time. I was able to drink at a restaurant I had never expected, and even managed to get some Kobukuro sashimi. Maybe that's what's good about coming alone.

Next time, I'd like to make a reservation and return, fully prepared to devour every last bit of the menu.
