This series of projects is a collaboration between Takara Shuzo, which preserves the traditions of sake brewing while passing them on to the next generation, and colocal, which uses local ingredients to propose special snacks.

Founded in 1959, we head to Sekitori, a specialty chicken shop and the originator of Niigata's specialty, fried half-chicken.
