[Commercialization process]

■Shimizu Seizaburo Shoten In our collaboration with Sake, we explored the combination of two different alcoholic beverages: beer and sake. For this latest SAKEKASU Hard Seltzer, we took a step further and combined it with hard seltzer. Hard seltzer is an alcoholic beverage that is not very familiar in Japan. As a low-calorie, low-sugar beverage, hard seltzer has grown in popularity, particularly in the United States, as one of the alcoholic beverages popular with health-conscious consumers. It is typically made by fermenting rice or molasses to produce alcohol, then adding carbonation and fruit flavors. Broadly speaking, it is a type of RTD (Ready-to-Drink) alcoholic beverage. In Japan, the RTD alcoholic beverage market has struggled to gain traction due to the strong competitor, chuhai.

■The label design uses Ise Katagami, a traditional Suzuka craft. Since its founding in 1924, Okoshi Katagami Shoten, the maker of the stencils used, has long strived to perfect the designs of Ise Katagami, producing numerous valuable stencils and preserving Japanese culture. [Attention to detail]

■We've combined sake, seltzer, and IPA to create a low-alcohol sake-style sparkling beer with a strong hop aroma and strong carbonation. It uses rice, sake lees, sake yeast, sugar, malt, and hops. This unique combination allows us to express an interesting flavor that cannot be expressed in the low-alcohol sake category. We hope that even those who don't like the taste of sake will enjoy this new drink that makes use of the aroma of sake!

[Taste]

■A light straw color with a slightly cloudy finish. It features a gorgeous apple-like ginjo aroma and citrus and tropical hop aromas.

When you put it in your mouth, you'll feel a pleasant fizzing carbonation, and the fruity aroma, along with a soft bitterness, will smoothly pass from the back of your throat to your nose. The aftertaste is crisp and dry. The aroma is very aromatic, with a strong ginjo character and the fruity and tropical characteristics of the hops. On the other hand, the taste is characterized by a refreshing dryness, making it easy to drink like a chuhai or seltzer.
