At the end of November last year, the famous "Hiruzen Yakisoba" restaurant in the Hiruzen district of Maniwa City, Okayama Prefecture, closed its doors after 40 years of history.Yamana Restaurant" resumed operations on June 2nd.
The store was run by the founder, Yuriko Yamana (82), and her son, Kimiaki, but was closed due to Yuriko's poor health and a chronic shortage of staff. However, after the closure was reported in the RSK Evening News, Takeshi Kiriaki, who lives in Maniwa City, stepped forward to take over.
Kiriaki, who used to work as a chef, saw the news and felt it was a chance to make his dream come true. The Yamana family readily agreed, and Kiriaki learned the recipe directly from Yuriko and faithfully reproduced the flavor. He also made some creative changes, such as reducing the number of side dishes, making it possible to operate with a small number of staff.
On the first day of reopening, many long-awaited regular customers came and enjoyed the unchanging, nostalgic flavors. Now in its 41st year since opening, Yamana Shokudo has once again begun to make history as a local soul food under new ownership.
