The annual "Collaboration Junmai Sake," a blend of unique sake from 31 sake breweries in the prefecture, has been completed once again this year. The Shiga Prefecture Sake Brewers Association has been creating Collaboration Junmai Sake since 2015 as an opportunity to draw attention to Shiga's local sake. This year, sake from 31 breweries that are members of the association was blended into one. In blending the unique local sakes of Shiga, component analysis was carried out and the brewers tasted the sake to achieve an exquisite balance.
