Fermentation Tourism in Tokai - A Pilgrimage to the Holy Land of Umami
"Fermentation Tourism Tokai 2025" is a tourism-oriented exhibition and experience program themed on the fermentation culture of Gifu, Aichi, and Mie, and will be held from May 17th to July 13th, 2025.
There will be an exhibition comparing fermented food cultures across the country, focusing on Gifu City, Handa City, and Taki Town in Mie Prefecture, as well as an exhibition focusing on the history of fermentation in sushi. Additionally, there will be related events such as 50 brewery openings, 100 hands-on programs, a local sake tasting, and a fermentation market. An official guidebook will also be published, introducing the food culture of the Tokai region from the perspective of fermentation.
