Okinawa soba "Mutsumibashi Kadoya"

Kissa Tsubame in Urasoe City has inherited the flavor of Mutsumibashi Kadoya, an Okinawa soba restaurant that closed in June of this year after operating in Naha City for 72 years. The owner of Kissa Tsubame was a regular customer at Kadoya, and wanted to preserve the traditional flavor, so after the restaurant closed, he asked the owner of Kadoya to take over the flavor. He took over the procurement of ingredients and cooking methods, and has been serving Okinawa soba since July. What a great story!

The 72-year-old Okinawa soba restaurant "Mutsumibashi Kadoya" has been passed down for generations, but the owner has refused to take over. A 20-year-old bar owner, a husband and wife from Urasoe City's "Kissa Tsubame," have been trained to "preserve the flavor." | Okinawa Times + Plus
The Okinawa soba restaurant Mutsumibashi Kadoya in Naha City, which closed its doors after 72 years of business in June this year, is being continued by the cafe Tsubame in Makiminato, Urasoe City. Kadoya's noodles are still the same, and the shop owner, Kazuyuki Miyashita (49), is enthusiastic about "preserving the same taste."
