Ozeki Co., Ltd. is a long-established sake brewery with a history spanning 314 years. With the aim of passing on traditional techniques to the next generation and taking on new challenges in sake brewing, the company has established the microbrewery Kaizo on its own premises.

Kaizo will be officially established on October 29, 2025, and will be a small-scale brewery that will handle all processes of sake brewing, from washing the rice to making koji, brewing, pressing, and bottling. The design is based on the theme of "visible brewing," and will feature a glass-walled brewing area so that visitors can see the process firsthand. In this way, the brewery aims to create a base where new sake is born that reflects the ideas and challenges of its employees while preserving tradition.

This initiative, which was launched after a 10-year planning period in response to industry challenges such as young people turning away from sake, the aging of master brewers, and a shortage of human resources, is aimed at nurturing the next generation and creating innovative sake brewing.
