"Tokyo Hachioji Sake Brewery"was established in the heart of Hachioji as Tokyo's first and tenth sake brewery of the Reiwa era. The brewery brews fresh, easy-to-drink unpasteurized sake, a style never before seen before, in the thoroughly controlled environment possible only in a small brewery. We spoke with Nishinaka, the brewery's representative, and Isozaki, the master brewer, about the future of sake and the vision they are striving for.
