Spice Cube Co., Ltd.Hakutsuru Sake BreweryTaking advantage of the Hyogo Open Innovation Matching 2024 event, Hakutsuru Sake Brewery Co., Ltd. has launched a joint project to utilize the CO₂ generated by fermentation during sake brewing. CO₂ generated at the microbrewery within the Hakutsuru Sake Brewery Museum is captured using DAC technology, and herbs are grown using Spice Cube's indoor agricultural device, "AGROT." This is a circular, sustainable initiative that uses the herbs as ingredients for sake and craft gin. In the future, the company aims to develop this project as a model for urban agriculture and upcycling.
