[Snacks to go with your drinks] Cultivating sake with sound: Kesennuma sake brewery to release "acoustically vibrated sake"

Otokoyama Honten, a sake brewery in Kesennuma, Miyagi Prefecture, has developed a new technology called "acoustically vibrated sake," which vibrates fermenting sake with jazz sounds, and will be releasing a product called "Ao no Oto" (Blue Sound) on August 6. Rather than playing music inside the brewery, this product uses an Onkyo vibration device installed on the outside of the tank to stimulate the yeast, which is expected to promote fermentation and bring about changes in flavor and aroma.

The music used was jazz from the original album "In Your Eyes" by Otokoyama Honten Managing Director Daiki Sugawara (33) and pianist Yuko Okamoto (41). The songs played included "Sweet Home," a song that expresses feelings for the local area. The experiment showed that the fermentation process was about three days earlier than usual, resulting in a sharper flavor with fewer impurities.

The product is "Soutenden Junmai Daiginjo Acoustically Vibrated Sake Ao no Oto," a limited edition of 1,000 480ml bottles, priced at 3,300 yen, and will be sold in Kesennuma and department stores.
